Ingredients
6 Medjool dates, pitted
2-3 Tablespoons organic peanut butter – I use Whole Foods organic peanut butter
6 Pretzels – I can’t do gluten, so I use Quinn’s whole grain GF pretzels. But use whatever ones you’d like.
½ cup dairy-free chocolate chips
1 Tablespoon raw peanuts (optional) – if you want a little extra nutty crunch.
Preparation
Open the dates with your hands and flatten out a bit. Spread peanut butter on the date then add a pretzel. If you choose to add the additional peanuts, you can add those now as well.
Melt chocolate chips (I use a double boiler). Then spoon the melted chocolate chips over the pretzels and peanut butter. Place in freezer for 15 minutes.
Once you try one, you’ll realize the hardest part of making them is letting them sit in the freezer for 15 minutes!
